Sterilizer of Knives in the Meat Industry, Working by Activating Aqueous Solutions with Glow Discharge Plasma

The development of approaches for the non-thermal sterilization of instruments is an urgent task to ensure the safety of meat industry products, where the use of hot water leads to the formation of condensates and a deterioration in the hygienic condition of the premises. In this study, an installation for sterilizing knives was created, which works by activating aqueous salt solutions with a glow discharge. The power consumption of the installation reactor is only 125−150 Wh. The temperature rise of the sterilizing agent used is about 1.1 ± 0.2 °C/min/L. The effectiveness of the installation for plasma-activation of aqueous solutions of chloride and sodium sulfate by glow discharge (PAW) in relation to the inactivation of microorganisms, including Staphylococcus aureus, Salmonella typhimurium, Pseudomonas gessardii and L. monocytogenes, on steel surfaces was evaluated. Relationship between Fungal Communities and Volatile Flavor Components during the Traditional Chinese Fermentation of Capsicum annuum L. Var. Dactylus M

Microbial diversity and dynamic changes play an important role in the production of fermented peppers. In this study, the relationship between fungal communities and the volatile flavor compounds of traditional Chinese fermented peppers was investigated by high-throughput sequencing technology. The results showed that Hanseniaspora was a dominant fungus during the whole fermentation course and accounted for 82.22% of the fungal community on average (ranging from 50.44% to 98.15%). Development of Antibody-like Proteins Targeting the Oncogenic Ser/Thr Protein Phosphatase PPM1D

PPM1D, a protein Ser/Thr phosphatase, is overexpressed in various cancers and functions as an oncogenic protein by inactivating the p53 pathway. Therefore, molecules that bind PPM1D are expected to be useful anti-cancer agents. In this study, we constructed a phage display library based on the antibody-like small molecule protein adnectin and screened for PPM1D-specific binding molecules. We identified two adnectins, PMDB-1 and PMD-24, that bind PPM1D specific B-loop and PPM1D430 as targets, respectively. Specificity analyses of these recombinant proteins using other Ser/Thr protein phosphatases showed that these molecules bind to only PPM1D. Expression of PMDB-1 in breast cancer-derived MCF-7 cells overexpressing endogenous PPM1D stabilized p53, indicating that PMDB-1 functions as an inhibitor of PPM1D. Growth Performance and Meat Quality of Growing Pigs Fed with Black Soldier Fly (Hermetia illucens) Larvae as Alternative Protein Source

Insects have been used as animal feed protein sources in livestock and poultry breeding, and their impact on pork quality needs to be studied. This experiment mainly explores the effect of adding black soldier flies to the feed on the growth performance and meat quality of pigs. All 24 weaned piglets were randomly divided into three groups, one group was given a normal diet as the control group (C), and the other two groups were supplemented with 4% (T1) and 8% (T2) black soldier flies as an alternative protein source, respectively. Pig growth performance and carcass traits were measured at the end of the 113-day experiment. After euthanizing the pigs, we used metabolomics to detect pig dorsal muscle and qPCR to detect gene expression in dorsal muscle and adipose tissue. Glutinol, a triterpenoid compound, has no documented systematic investigation into its mechanism. Hence, we used network pharmacology to investigate glutinol’s mechanism. The chemical formula of glutinol was searched in the PubChem database for our investigation. The BindingDB Database was utilized to discover probable glutinol target genes after ADMET analysis with the pkCSM software. DAVID tools were also used to perform Gene Ontology (GO) enrichment analysis and Kyoto Encyclopedia of Genes and Genomes (KEGG) pathway enrichment analysis of target genes. A Step for the Valorization of Spent Yeast through Production of Iron−Peptide Complexes—A Process Optimization Study

Given the importance of iron in human nutrition and the significance of waste and by-product valorisation in a circular economy environment, we investigated the effects of protein and iron concentration on the production yield of iron−peptide complexes from spent Saccharomyces cerevisiae. For this purpose, different amounts of protein and iron were used in the complexation process. The results have shown that higher concentrations, although permitting a faster and larger scale process, provide a significantly lower complexation yield, which deems the process less feasible. This is corroborated by fluorescence analysis, which shows a lower degree of complexation with higher protein concentration. Comparative Insights into the Antimicrobial, Antioxidant, and Nutritional Potential of the Solanum nigrum Complex

Solubility of Biocompounds 2,5-Furandicarboxylic Acid and 5-Formylfuran-2-Carboxylic Acid in Binary Solvent Mixtures of Water and 1,4-Dioxane

The solubility of 2,5-furandicarboxylic acid (FDCA) and its synthetic intermediates (e.g., 5-formylfuran-2-carboxylic acid, FFCA) provides fundamental information for the preparation and purification of the value-added biocompound FDCA. We measured the solubility of FDCA and FFCA in binary water + 1,4-dioxane mixtures with different mixing ratios at 303.15 K−342.15 K. The obtained solubility values were correlated with the Jouyban-Acree-van’t Hoff model, and the preferential solvation theory was used to study the microscopic dissolution mechanism. The solubility of FDCA/FFCA increases with increasing temperature, and pure 1,4-dioxane dissolves more solutes than pure water. FFCA shows higher solubility than FDCA. In the binary solvent mixtures, the phenomenon of co-solvency exists for both FDCA and FFCA, i.e., at a 1,4-dioxane mole fraction of about 0.60, FDCA and FFCA dissolve the most. Genetically modified (GM) crops expressing insecticidal and herbicide-tolerant traits provide a new approach to agriculture production, but concerns about food safety were often raised by the public. The present research shows the findings of the nutritional assessment of ZDAB3 expressing insecticidal Cry proteins (Cry1Ab and Cry2Ab) and EPSPS protein (G10evo-EPSPS). The key nutrients and anti-nutrients of ZDAB3 maize were examined and contrasted with those of its non-transgenic control maize grown at the same locations during three planting seasons. The values for proximates, amino acids, fatty acids, minerals, vitamins, phytic acid, and trypsin inhibitor assessed for ZDAB3 were comparable to those of its non-transgenic control maize or within the range of values reported for other commercial lines. Optimization of Grinding Process of Sunflower Meal for Obtaining Protein-Enriched Fractions

The process includes two-stage grinding using a hammer mill and a roll mill, and fractionation of sunflower meal by sieving. Central composite design (CCD) with four variables on three levels within response surface methodology was applied in order to estimate the influence of grinding parameters (sieve openings diameter of the hammer mill: 2, 4, and 6 mm, roll gap: 0.15, 0.2, and 0.25 mm, feed rate: 0.1, 0.175, and 0.25 kg/cm min, and roll speed: 400, 500, and 600 rpm) on responses (protein content, fraction yield and grinding energy consumption). Optimization of Red Pigment Anthocyanin Recovery from Hibiscus sabdariffa by Subcritical Water Extraction

The optimization of red pigment anthocyanin from roselle (Hibiscus sabdariffa) by subcritical water extraction (SWE) has not been the topic of a scientific investigation. Therefore, the objective of this paper was to establish the optimal parameters for obtaining the maximum yield, total anthocyanin compounds (TAC), total phenolic compounds (TPC), and total flavonoid compounds (TFC) by SWE utilizing a response surface methodology. The optimal conditions were 8.75 MPa, 393.54 K, and 4.89 mL/min, with a yield of 0.69 g/g, TAC of 927.74 mg/100 g, TPC of 39.54 mg/100 g, and TFC of 614.57 mg/100 g. High temperatures and flow rates are favorable for achieving a maximum yield. In contrast, a high temperature is suitable for obtaining high concentrations of anthocyanin, flavonoid, and phenolic compounds. This technique (SWE) recovers anthocyanin at a greater extraction rate than traditional methods; hence, SWE may be substituted for conventional methods for extracting anthocyanin.

Real-time monitoring of antibiotics in hospital and pharmaceutical wastewater using ultraviolet−visible (UV−Vis) spectroscopy is considered a promising method. Although gas chromatography−mass spectrometry (GC−MS) and other methods can detect antibiotics with quite low limits of detection (LOD), they possess various limitations. UV−Vis spectroscopy combined with chemometric methods is a promising choice for monitoring antibiotics. Legumes are sustainable protein-rich crops with numerous industrial food applications, which give them the potential of a functional food ingredient. Legume proteins have appreciable techno-functional properties (e.g., emulsification, foaming, water absorption), which could be affected along with its digestibility during processing. Extraction and isolation of legumes’ protein content makes their use more efficient; however, exposure to the conditions of further use (such as temperature and pressure) results in, and significantly increases, changes in the structural, and therefore functional and nutritional, properties. The purpose of this study was to gain an insight into the manner in which several extraction processes (both classical as well as innovative) affected bioactive compound yield, and subsequently to assess several of their biological activities. Red clover extracts were obtained using maceration, Soxhlet extraction, turbo-extraction, ultrasound-assisted extraction, and a combination of the last two. The resulting extracts were analyzed for total phenolic and flavonoid content. The extracts presenting the best results were subjected to a phytochemical assessment by way of HPLC-MS analysis. Chemical Analysis and Quality Assessment of Honey Obtained from Different Sources

The purpose of this paper was to evaluate the quality of bee honey from different sources: beekeeper, local market and organic honey. Sensory analysis was performed and the water content, pH, acidity, protein content and total metal content (Cu, Cr, Mn, Co, Ni, Pb, Cd, Fe) were determined. The sensory analysis was carried out by a group of untrained panelists for quality assessment of honey. The metal content was determined by graphite atomic absorption spectrometry (GTAAS). Mineralization was carried out in a microwave digestion system, in a high-pressure polytetrafluoroethylene (PTFE) vessel, using a standard acid-digestion protocol. The results regarding the physico-chemical parameters showed that the honey samples were in accordance with the quality regulations for honey as a commercial product. Hypoglycemic Effect and Experimental Validation of Scutellariae Radix based on Network Pharmacology and Molecular Docking

Scutellariae Radix (SR) is a well-known traditional herb that has good pharmacological effects against diabetes. However, the mechanism of SR against diabetes is not clear. In this study, the ingredient−target−pathway relationship and hypoglycemic effect of SR on diabetes were explored using network pharmacology, molecular docking and an animal experiment. The targets of SR and diabetes were mined. The selected targets were studied using Gene Ontology (GO) enrichment analysis and pathway enrichment analysis. The network of active components, targets and pathways was integrated to analyze the ingredient−target−pathway relationship. Gestational diabetes mellitus (GDM) is a type of diabetes initiated during pregnancy and is characterized by maternal hyperglycemia that induces complications in mothers and children.
